Carrot Cake

Omg carrot cake is amazing. The hardest part was shredding all those little carrot. I thought to get a bag of baby carrots to use and shredd for the cake because mom likes to eat them with ranch.

So i had to shred like 60 of those little demons in order to get the 2 1/2 cups of carrots to put in the cake. Then when it was done, i tried a piece, and i either put too much flour in it, overcooked it, or that 1/2 cup carrots i did shred for it mattered. Lolsh. It still tasted great, and then I wanted to put a little carrot on top of each piece, but it failed on the first three, so I jsut made a big one in the middle xD

I still think it looked good, and it tastes just fine. A little dry, but fine. Haha
